Quality of Glycine max (soybean) and Helianthus annuus (sunflower) oils stored in different environments and their suitability for consumption

Soybean and sunflower oils contribute to the diet in many countries, serving as a source of protein, lipids fatty acids, repair worn-out tissues are useful energy. Their excessive or inadequate consumption may provide increased risk developing various diseases. Sunflower seed provides 20-40% oil soybeans with immense advantages due their high content essential acids. This work aimed evaluate physicochemical quality soybean effects on health. 5 samples oils: A, sealed exposed ambient light; B, without exposure sunlight; C, D, unsealed light E, were evaluated by determining acidity index, through titration NaOH 0. 1N, peroxide Na2S2O3 0.01N, moisture, dissection at 105ºC, rancidity, qualitative method vitamin A iCheck Chroma. The NM 425:2012 legislation was used verify suitability otherwise samples. Moisture ranged from 0.1 0.92 w/w, index 0.17 0.34mgKOH, 4 15.2 meq.O2/Kg, between 13.27 29.95mgRe/Kg positive rancidity. results showed that provided adequacy other parameters inadequacy for consumption.
